Super Bowl Sunday is Coming!!
I love football season. The grand finale, Super Bowl Sunday, is three days away from the posting of this blog post. My team, the NY (football) Giants, are not even in the Super Bowl, but I am still excited.
We have drama. Still in 2016, there is talk about black quarterbacks when we speak of Cam Newton. There is talk of this possibly being the last game for future Hall of Famer, Peyton Manning. Both the Broncos and Panthers have great defenses. Lady Gaga is singing the national anthem and Coldplay is headlining the halftime show, with appearances from Beyonce and Bruno Mars.
But some of you are saying, “I do not care! I just want the food!” I am not sure why food is such a big part of Super Bowl Sunday, but I too get caught up in the hoopla. I do not, however, want to get so caught up that I forget I am working to maintain a healthy lifestyle. That is why I have taken some time to come up with menu options for my Super Bowl celebration. I will use these along with tips that I shared last year.
Super Bowl Menu Options
Below is a list of options for a Super Bowl Sunday feast. Give the recipes a try. Let me know how they went. There are three recipes I have not made before. They are the cauliflower, tomatillo salsa, and the cinnamon rolls. And in case you were thinking it, no, I will not be making all of this on Super Bowl Sunday. My menu has not be finalized, but these are options.
Cauliflower Tortillas: I came across this recipe by someone who shared it on Facebook. I got really excited because I tend to avoid regular tortillas. Since I already love cauliflower pizza crust (see below), I said, “Hey, I am going to give this a try.”
Tomatillo Salsa: Buying a jar of salsa saves time, but when you make your own you get control what does and does not go in it. Mainly you get to control the amount of sugar and salt.
The BEST Cauliflower Crust Pizza!: If you read my post Don’t Gain Weight at the Super Bowl Party!, you know I love pizza. Some may find cauliflower as a pizza crust a bit odd, but let me tell you something, this is some pretty tasty good stuff. Make this crust, add an organic tomato sauce, not too much because it gets too soggy, and some veggies and/or lean meat and you are set.
Black Bean Burgers: Friends of mine had a pool party this past summer. Before that day I had never had a black bean burger. In fact, until that day I made the poopie face at the mere mention of such a thing. That day I gave them a try. They were GOOOOD! They were so good I asked my friend for the recipe. That is what I am sharing with you. The link to this recipe comes with a video. Bonus!
Easy Taco Pie: I recently made this, minus the corn, optional sour cream, and added the recommended frozen roasted sweet potatoes. I am not a fan of sour cream. I made my own roasted sweet potatoes. As the saying goes, “I put my foot in that Easy Taco Pie.” Translation? It was pretty dang good.
Clean Eating Buffalo Wings: These were a hit when I made them last. I am currently on the hunt for a different recipe because my stomach cannot handle spicy foods anymore. Don't let my issues keep you from giving them a try. The key to these wings is that they are baked, not fried. Be mindful of the hot sauce because of the sodium.
Healthy 30 Minute Cinnamon Rolls: I love cinnamon rolls. I attempted to make these for Christmas, but with me not being much of a chef I never had time to make them. These are a draw for me because they use white whole wheat flour rather than white flour.
Chocolate-Banana “Ice Cream”: I like ice cream. I do not love it so not having is no big deal for me. I know, however, that there are people who love their ice cream. I made this a couple of years ago. It was a hit as an ice cream alternative. No ice cream maker required. In the morning put some bananas in the freezer, then during half time or the third quarter follow the recipe and enjoy.
